Determinants of Web-based CSR Disclosure in the Food Industry

Florian Sommer, Jeanette Klink, Daniela Senkl & Monika Hartmann
Purpose –Web-based CSR disclosure provides a variety of advantages for firms. Determining factors for web-based CSR disclosure have been analyzed in several papers. However, only limited research has been conducted on both, the food industry and small and midsized enterprises. This paper is one contribution to fill this gap as we investigate web-based CSR communication of food processors including SME. Design/methodology/approach – We analyzed corporate communication on the websites of 71 food producers from North...

Moving towards Sustainability in Food Chains: Dealing with Costs and Benefits

Gerhard Schiefer & Jivka Deiters
Sustainability concerns are receiving increasingly attention by society and in turn, the food sector and consumers as the food sector’s final customers. Investments towards improvements in sustainability along the chain are usually not evenly distributed along the chain which affects the balance in the distribution of costs and returns. Transparency is a means for supporting an appropriate link between costs and returns. Various alternatives are being discussed. The chapter utilizes a case study approach for...

The Balanced Scorecard as a Management Tool for Arable Farming

Margit Paustian, Marie Wellner & Ludwig Theuvsen
Management requirements for crop farming are high and will rise in the future. Arable farms are challenged by volatile markets, growing administrative burdens, increasing operating costs and growing competition for land. Management skills have become much more important for farmers in recent years and this trend will continue in the future. There are numerous instruments like accounting software or crop field cards integrated in daily management practice, but there is a deficiency of a fully...

Drivers of innovation in the European Food Industry: Evidences from the Community Innovation Survey

Stefano Ciliberti, Stefanie Bröring & Gaetano Martino
Cooperation is particularly important for innovation in the food industry. as it has traditionally been considered as a “low tech” sector. This paper analyses how different forms of cooperation affect innovation activities in the EU’s food industry. To this purpose, we analysed data at the country level drawn from the Community Innovation Survey (CIS). A random effect linear model is formulated and estimated to analyse the panel data obtained from five CIS waves. The model...

Structural Changes and Dairy Chain Efficiency in Italy

Franco Rosa, Robert D. Weaver & Michela Vasciaveo
The dairy chain in Italy experienced substantial structural changes during the past years. Since the introduction of milk quotas in 1984, structural changes caused by consistent reduction of dairy farms, growing brand concentration at wholesale level, and diffusion of private labels at retail level may have altered the competitive market conditions, with increasing price asymmetry and inefficiencies in price transmission. We tested this hypothesis using the McCorriston and Sheldon’s successive oligopoly model, and we gave...

Urban Gardening Realities: The Example Case Study of Portsmouth, England

Alan Hallsworth & Alfred Wong
This paper offers an empirical case study of the potential for urban gardening to contribute to individual food security. Food security generally encompasses both availability and accessibility. In Western Europe, availability per se has declined in importance with the development of national and international transportation networks. During the past decade, urban gardening has gained political currency as a strategy to provide greater food security at the local level. However, prevailing economic and social structures hamper...

Consumer Preferences for High Welfare Meat in Germany: Self-service Counter or Service Counter?

Ramona Weinrich, Sarah Kühl, Anabell Franz & Achim Spiller
Many people view animal welfare standards in the agricultural industry as critical and some consumers would prefer to buy high welfare meat. In order to successfully introduce high welfare meat products onto the market, some important marketing decisions must be made. Due to limited shelf space in retail outlets, niche products like high welfare meat cannot be placed both at the self-service counter and at the service counter. In order to analyze where to place...

Economic Dynamics of the German Hog-Price Cycle

Ernst Berg & Ray Huffaker
We investigated the economic dynamics of the German hog-price cycle with an innovative ‘diagnostic’ modeling approach. Hog-price cycles are conventionally modeled stochastically—most recently as randomly-shifting sinusoidal oscillations. Alternatively, we applied Nonlinear Time Series analysis to empirically reconstruct a deterministic, low-dimensional, and nonlinear attractor from observed hog prices. We next formulated a structural (explanatory) model of the pork industry to synthesize the empirical hog-price attractor. Model simulations demonstrate that low price-elasticity of demand contributes to aperiodic...

BiodieselFAO: An Integrated Decision Support System for Investment Analysis in the Biodiesel Production Chain

Aziz Galvão Da Silva Júnior
In the short and medium terms, biofuels are the most viable alternative to reduce the environmental impact of fossil fuels. The recent controversy over the competition between biofuels and food production increases the complexity of investment decisions in the biodiesel production chain. In this context, decision support tools are highly relevant. The purpose of this article is to describe the BiodieselFAO using the Unified Modeling Language (UML). An integrated analysis considering both agricultural and industrial...

Systematic Heterogeneity:How to Combine Smartphone Related Apps with Fispace

Harald Sundmaeker & Peter Einramhof
FIspace represents an Internet based B2B collaboration platform that can be used by actors along the supply chain, and specifically the agri-food chain, facilitating the design and usage of inter-organisational workflows. The FIspace platform was developed by using FIWARE, a European initiative to develop technologies for a Future Internet. At the same time, the requirements of actors from an agri-food related B2B environment were analysed. One of the key requirements was the demand for smartphone-based...

Sustainable Consumption and the Attitude-Behaviour-Gap Phenomenon - Causes and Measurements towards a Sustainable Development

Wiltrud Terlau & Darya Hirsch
This paper presents a review of interdisciplinary research literature on the complexity of sustainable food consumption and offers an empirical analysis of selected countries worldwide. It seems that the consumer behaviour is the most unstable and unpredictable part of the entire supply chain and requires special attention. Concrete measures to influence consumer behaviour towards sustainable consumption are highly complex. The Danish example, explored in this paper, with its well-functioning organic market demonstrates that sustainable food...

What is the benefit of organically-reared dairy cattle? Societal perception towards conventional and organic dairy farming

Inken Christoph-Schulz, Petra Salamon & Daniela Weible
During the last years, current systems in agriculture and food production have been topic in public discussions. Especially modern animal husbandry seems not to match consumers’ or societal needs any longer. This paper concentrates on the society’s perspective regarding dairy farming in general and diverting perceptions and expectations with respect to dairy cattle either reared organically or reared conventionally. It aims to give orientation to farmers as well as policymakers about the societal point of...

Determinants of Job Search Success of German Agricultural Sciences Graduates

Birgit Schulze-Ehlers
This paper shows how job search success, measured as search duration and entry salary, is affected directly or indirectly by personal and process as well as structural characteristics. A specific focus is on the relevance of practical experience which is claimed to be a key feature of employability. While self-assessed practical and namely international experience is positively related to salary, but not to search duration, the number and duration of internships does not affect job...

Green-Lean Synergy - Root-Cause Analysis in Food Waste Prevention

Pegah Amani, Ingela Lindbom, Barbro Sundström & Karin Östergren
Purpose_The goal of this paper is to explore the possible synergetic effects between lean philosophy and green endeavors in improving resource efficiency in the food sector. To that end, it is investigated how a proper and tailor-made adaptation of the lean six sigma root cause analysis method could help in overcoming the complexities of increased resource efficiency in food production. Design/methodology/approach_The case study concerned reduction of waste at an industrial production line of a dough-based...

Web Data Mining and Social Media Analysis for better Communication in Food Safety Crises

Christian H. Meyer, Martin Hamer, Wiltrud Terlau, Johannes Raithel & Patrick Pongratz
Although much effort is made to prevent risks arising from food, food-borne diseases are an ever-present threat to the consumers’ health. The consumption of fresh food that is contaminated with pathogens like fungi, viruses or bacteria can cause food poisoning that leads to severe health damages or even death. The outbreak of Shiga Toxin-producing enterohemorrhagic E. coli (EHEC) in Germany and neighbouring countries in 2011 has shown this dramatically. Nearly 4.000 people were reported of...

Chile-EU Trade Agreement: What Can We Learn from Trade Statistics?

Jaime De Pablo Valenciano, Miguel Angel Giacinti Battistuzzi & Tomás Garcia Azcaráte
An Association Agreement concluded between the European Union and Chile in 2002 included a comprehensive Free Trade Agreement (FTA) that entered into force in February 2003. Our purpose is to analyse some of the economic consequences of the agricultural part of this agreement focusing in the fruit and vegetable market. Our finding is that market concentration has significantly decreased since the beginning of previous decade and has been reinforced in both markets. This has been...
