Sucrose Processing Upgrade Carried Out in a Continuous Membrane Reactor Using Invertase, Glucose Oxidase and Catalase

This work deals with the use of the following enzymes, invertase (I), glucose oxidase (GO) and catalase, in order to convert sucrose into fructose and gluconic acid by using a 10mL­membrane reactor (MR) coupled to a 100kDa­ultrafiltration membrane. It was observed that the enzymes presented dissimilarity regarding their respective activity and thermal stability.
