Sucrose Conversion into Inverted Syrup by Invertase through the Fed-Batch Process Operated in the Decreasing Exponential Feeding Mode

This work is about the hydrolysis of sucrose into fructose and glucose (inverted syrup) by using invertase [INVERTIN®; (EC.3.2.1.26)]. Its catalytic parameters are as follow: pHoptimum = 5.0, Toptimum = 60oC, Ea = 33 kJ/mol, .H = 30 kJ/mol, KM = 19.6 mM and Vmax = 2.12 U/mL.
